GF/CF/YF bread recipe help, please

Wow, someone else on my boat!! We are also gf/cf/yf... but also rice free. That has been a load of fun, let me just tell you!! After lots of angst, here is a recipe we like.. not crumbly, tastes good!

In one bowl:
2 1/2 c Bob's red mill GF flour mix
1 tsp salt
3 tsp baking powder
3 tsp xantham gum

In one bowl:
2 eggs (or egg replacer)
1/2 cup oil
2/3 cup almond milk (soy or coconut can be used, or 1/2 cup purified water)

keep separate:
1/2 cup sparkling water or club soda (to act as a leavening agent)

mix all dry ingredients, mix egg, oil and milk and add to dry ingredients. Mix well. Add sparkling water (don't give up, it will mix...)

Cook at 350 for 1 hour. You can put aluminum foil over the top of the loaf after the first 20 minutes or so to keep it from getting too brown. This doesn't rise as well as yeast breads and tends to be a little dense, but still good stuff for gf/cf/yf!!

We also love Bob's red mill gf/cf brownie mix, fyi.
