My GFCF Chicken Nuggets

Boneless chicken breast, cut into pieces
Mustard (French's or other GF brand)
Potato Chips, crushed (Utz, Lays or other GF brand)
Brown rice bread crumbs (such as Hol-Grain)

Preheat oven to 350 degrees.
Crush potato chips by putting in a plastic bag and using a rolling pin.
Mix with bread crumbs in a bowl, 2 parts chips to 1 part bread crumbs.
Dip chicken pieces in mustard, then dip in the bowl of chips/bread crumbs.
Bake for 30 minutes at 350 degrees.

We also use crushed Nutty Rice cereal.

Oh--when I make them in the oven, my chicken pieces tend not to brown well. sometimes I'll toast my bread crumbs in oil until golden brown before using them to bread the pieces. Then I bake them and they look like they're supposed to. :D I also use this trick with baked fish.

We've fried chicken pieces in safflower oil using potato flour and EnerG egg replacer for batter with pretty good luck.
