The best GF/CF/EF/YF loaf of "white bread" I ever baked...

Wow! I finally baked a loaf of "white bread" for sandwiches that looked good and tasted good. It almost looked completely like normal bread.

I went to Target and bought a 4.8 cup Pyrex glass bake and store set for less than $10:

I modified Lisa Lundy's bread and roll recipe(http://www.thesuperallergycookbook.com/ ... 090404.pdf) to come up with this:

1½ C Bob's Red Mill gabanzo bean flour (or chickpea)
1½ C Bob's Red Mill finely ground tapioca flour
1 TBSP Bob's Red Mill xanthan gum
1 TBSP Rumford aluminum free baking powder
3/4 tsp sea salt
1 TBSP Ener G Egg Replacer
2/3 C safflower oil
1 C Rice Dream organic rice milk
1 C Canada Dry club soda (from 10oz glass bottle)

Fill the bread pan about half way. I used a wet baking spatula to smooth the top of the bread. This uses about 2/3 of the batter for the Pyrex pan.
I baked at 350F for 75 minutes.
Place on a wire rack to cool. Wait until bread has cooled to room temperature to slice.

I was able to reproduce the results. The key is to only fill the pan up half way because this bread rises significantly.

Interesting. I use duck eggs instead of chicken eggs. Do you think it would work with duck eggs?

Instead of sugar I used applesauce or baby food prunes.
