Blueberry Pudding

Not a new idea really but I've been making this a lot and it is really great for my daughter. It has tons of antioxidants, B vitamins, and is a low glycemic form of carbohydrates. Acai has something like over 100 times more antioxidants than blueberries. It was really well tolerated when she was having yeast flareups and couldn't tolerate other fruit. This recipe makes a big container full, you could 1/2 it. If it's not sweet enough you could add honey.

2 10 oz bags frozen blueberries (or get big bag from Costco and use half, they have organic at mine)
2 10 oz bags frozen blackberries
1 packet frozen Acai puree (I buy Acai Roots from WF)
2 ripe avocados

Put berries and acai in a pot with about 1 cup water. Heat until bubbling then turn down heat to simmer until berries get mushy and start to fall apart. Add avocado and puree in blender or use stick blender. When it gets warmer I want to try putting it into an ice cream maker.
