Kale Chips

This is a pretty good SCD or GAPS legal snack. We just buy the pre-washed bag of kale a the grocery store, toss with some olive oil, bake @350 for about 10 mins and then salt. They are good.

We have fried spinach leaves before and sprinkled with salt and/or sugar. It doesn't provide a lot of substance (they are crispy and delicate, literally falling apart with any pressure), but it makes for an interesting 'edible decoration' and they taste really good. (IMO of course!) It makes oven cooked chicken look a little more glamorous. ;)
