Celery Root ( Celeriac ) Fries and Mashed Celery Root

Celery Roots are SCD legal and make a good substitute for potatoes!!

I wanted to pass along recipes for both celery root fries and also mashed celery root.
For the fries, cut off "feeder roots" and peel the rest. Wash and then slice into fries. Fry in hot safflower oil until well done. They taste surprisingly close to a potato fry.

For the mashed potato substitute, do the same but peel and boil until cooked well done and somewhat tender, then mash like potatoes. These 2 dishes have helped to satisfy my son's craving for potatoes, while maintaining GAPS SCD compliance.

The celery root is quite pungent, so they must be cooked well to remove bitterness. They also are higher in fiber than potatoes, so they need to moderated.

They have been a little limp, not very crispy, but they seem to satisfy the craving for french fries.
