Soy free canola mayonnaise recipe

I originally called this post "SF heated mayonnaise" but think "Soy free canola mayonnaise" sounds better. Now I know not to post recipes when sleepy! :D


Below is a mayonnaise recipe that is 1) made with healthy canola oil (in place of commonly used soybean oil) and 2) heated to kill any salmonella which may be present in the egg yolks.
I found this recipe handy when making coleslaw and potato salad for Memorial Day celebrations.

2 egg yolks
3/4 teaspoon French’s yellow mustard (no gluten)
1/2 teaspoon salt
2 tablespoons water
1 tablespoon lemon juice, bottled*
1 cup canola oil

Whisk egg yolks, mustard, salt, water, and lemon juice in a saucepan until well mixed. Place pan over a VERY low heat. Continually stir while carefully observing any bubbling of the liquid mixture. Remove pan from heat at the first instance of bubbling. Let cool for 5 minutes, stirring routinely. Place mixture in a blender and cover. While blending at a medium-high speed, SLOWLY add oil to mixture through hole of blender cover. Blend until mayonnaise has a smooth texture. Refrigerate.

*Variation: substitute 2 tablespoons apple cider vinegar for lemon juice

Yield: about 1-1/2 cups
