memorial day GFCFSF potato salad

Here is a GFCFSF recipe for potato salad. Nice around Memorial Day.


2 pounds unpeeled red potatoes (about 5 small red potatoes)
2 hardboiled eggs, chopped
1 medium onion, finely chopped
1 medium celery stalk, chopped
1 cup soy free canola mayonnaise (recipe posted in this forum)
1 tablespoon apple cider vinegar
2 teaspoons French’s yellow mustard (no gluten)
salt and black pepper

Cook potatoes in a large pot of salted water for 10-15 minutes, or just until tender. Drain water. When potatoes are cool, cut into 1-inch cubes and place in a large bowl. Add eggs, onion, celery, vinegar, mustard, and mayonnaise. Toss until well coated. Season with salt and black pepper to taste. Refrigerate 2-3 hours.

Yield: 6 servings
