Asian Lo Mein

Asian Lo Mein recipe with a little twist.

8 ounces thin gluten free egg noodles, dry
1/8 cup peanut oil
4 green onions, chopped
1 clove garlic, crushed
1 carrot, chopped
2 medium red bell peppers, thinly sliced
1 bamboo shoot, chopped
1/4 cup oyster sauce
1 tablespoon tamari
1 teaspoon sugar

Boil noodles in a saucepan filled with salted water for about 5 minutes. Drain and rinse noodles in cold running water. Set noodles aside.

Heat oil in a skillet or wok over a high heat. Saute green onions, garlic, carrot, peppers, and bamboo shoot for 1-2 minutes. Stir in cooked noodles, oyster sauce, tamari, and sugar. Stir-fry for an additional 5 minutes.

Yield: 4 servings
