Country Fried Cabbage SCD Legal and LOD

1/2lb to 1lb of SCD legal uncured bacon
1/2 head of green cabbage
1/4inch cut out of a white onion

Take a 1/2 pound to a pound of SCD legal uncured or "honey cured" nitrate free bacon. Chop it into thumb length pieces.
Put it in a frying pan over medium heat.
Cut an onion ring width size section from a white onion. Separate and put in the pan with the bacon.
Fry for 5-10 minutes until much of the bacon fat and grease are rendered.
Take a half head of green cabbage. Cut out the core. Chop the cabbage into thumbnail size pieces.
Add to the frying pan and toss well to get greasy.
Toss frequently. Fry until cabbage is tender, onion is tender, bacon is crisp and cabbage is starting to brown.
Takes about 20 minutes or so. Serve hot.

I don't like cabbage much, but this is very good.

Also, I've learned I can go to Whole Foods and buy butchered all natural pork bellies. I found the curing process is not needed. I can smoke them for 2 hours at about 225F until meat reaches about 140F. I then put them in the fridge for a few hours and slice into bacon when cold. This makes the best bacon I've ever had. Store bought uncured "honey cured" bacon will work too.
