SCD Pizza

1 cup cauliflower
1/2 c coconut flour
1/2 c chicken (I use chicken breast)
1 cup hard cheese (Parmesan/Colby/Cheddar work great)
2 eggs (preferably pastured)
2 tbsp oil (beef tallow/coconut oil/olive oil)
1/2 tsp dried seasoning (garlic, onion, oregano, basil, cilantro)

Step 1 - Wash cauliflower, pat dry, then microwave until the smell becomes intense. Usually takes about 1.5 to 2 minutes.
Step 2 - Blend coconut flour, chicken, hard cheese, and dry seasoning
Step 3 - Add cauliflower
Step 4 - Add oil and eggs
Step 5 - Form into a large ball
Step 6 - Place in between 2 pieces of parchment paper
Step 7- Use rolling pin or use a cast iron skillet and flatten to form a circle, I personally use a heavy skillet.

Preheat oven to 350 degrees F. Cook for 15 minutes or until a golden brown color forms around the crust. Add pizza sauce and toppings. Then cook for additional 5-10 minutes.

Pizza Sauce
Roma Tomatoes - about 1 1/2 pounds
Garlic Cloves - 2-4 garlic cloves
Shallots/Onions - 1/2 cup
Basil - to taste
Oregano - to taste
Cilantro - to taste
Sea Salt - to taste

Step 1 - Cut a X on the bottom of the tomatoes, drop into boiling water for about 2 minutes, then place in ice water bath, proceed to peel
Step 2 - Mince and saute garlic, shallots/onions
Step 3 - Remove tomato seeds and water by squeezing and draining juice
Step 4 - Cook tomatoes w/ garlic, shallots/onions for about 5 minutes
Step 5 - Add dry seasoning of your choice
Step 6 - Blend then can for later

My kids love cheese pizza. So, I top with cheese and shredded carrots.
