Gluten Free Cookie Dough Brownies

Cookie Dough Recipe
1tsp. baking soda
1 tsp. salt
2 ounces cream cheese, room temperature
1 cup packed brown sugar
½ cup sugar
1 ½ tsp. vanilla extract
2 ¼ cups good all purpose gluten- free flour
¾ cups unsalted butter, melted
2 eggs yolks (room temp)
2 cups semi-sweet chocolate chips
1. In a large bowl whisk the gluten free flour, baking soda and salt. Set aside.
2. In the bowl of your stand mixer, place the cream cheese first and then pour the melted butter over it.
3. Add the brown sugar and sugar and mix on medium speed for about 2 minutes.
4. Add vanilla extract and egg yolks, mix on low speed.
5. Combine the flour mixture set aside earlier. Then add chocolate chips.
6. Cover the bowl with plastic wrap or aluminum foil and set it in the refrigerator for a minimum of 4 hours.

Brownie Recipe
2/3 cups almond flour
½ tsp. salt
1 tablespoon cocoa powder
¾ cup dark chocolate coarsely chopped
½ cup coconut oil
1 cup coconut sugar
2 eggs
1 teaspoon vanilla extract
1 cup dark chocolate chips
1. In a large bowl whisk the almond flour, salt, and cocoa powder together.
2. Put the chocolate and coconut oil in a large bowl in the microwave for 30 seconds. Stir and repeat until the chocolate and coconut is melted and smooth.
3. Add the coconut sugar. Whisk until completely combined.
4. Add 2 eggs to the mixture and then add the vanilla. Do not overbeat the batter.
5. Sprinkle the flour mixture over the chocolate mixture. Once mixed fold in the chocolate chips.

Preheat the oven to 350 degrees. Spray your baking pan with Wilton bake easy non stick spray. Then pour in brownie batter. Next add scoops of cookie dough into your brownie batter. Finally place the pan in the oven and let it bake for 30 minutes.
