Anyone have an "ice cream" recipe?

I just found out that Rice Dream may have gluten in it. Does anyone have a GF/CF, soy free and corn free recipe for ice cream? Perhaps using Vance's Darifree? I'm probably going to buy the icecream maker shaped like a ball from L.L. Bean. I thought Drew would have fun making his own ice cream in it, especially when we go to our camp.

Using Vance Darifree:

8oz warm water
1/3 c. dry darifree
Mix well, then add:
1/3 cup sugar (we use xylitol instead to cut back on sugar)
1 1/2 tsp. egg replacer
1 tsp oil (can use flaxseed)
1/2 tsp. gf vanilla
pinch of salt
(can add some liquid cal./mag.)
shake well & add ice to make 16oz of liquid
once ice is melted, should be enough liquid to use ice cream maker.

* can add fruit or cocoa powder for different flavors

I have made this a few times......it doesn't seem to get as thick as regular ice cream, but tastes yummy! i've also used the liquid to put in popsicle molds and freeze.

Ice cream using almonds (I use a Vitamix-you need something pretty strong to make this)


Soak 1 cup almonds in water overnight

3/4 cup water
1 cup almonds
3 TB vanilla
3 TB agave nectar

Turn on Vitamix for 2 minutes and pour into a glass container.
Place in freezer

Coconut milk (cheaper at Asian stores) mixed with honey or sugar or other sweetener and made in an ice cream maker. It's very creamy. You can even add cocoa powder to it to make chocolate ice cream. You can still taste the coconut over the chocolate, but it's very good.

It's gluten free.

If you look closely, they will say GF at the bottom of their package.

I think if you put this in an ice cream maker it would taste like creamy lemon sorbet and is SCD/GAPS legal:

Regarding coconut milk, I think it would still taste good to use fermented coconut milk, making a coconut milk yogurt to use in the ice cream. That would be easier to digest. I've been wanting to try it.

I tried this. It was so thick I just put it in the freezer in a bowl. You could totally do this in a freezer pudding pop mold. Or maybe thin it somehow (mix with yogurt?) and put it in an ice cream maker.

We take homemade yogurt and put it in a cuisinart ice cream maker. It has the consistency of real ice cream and is very satisfying. After it's been kept in the freezer, it's as hard as a brick though.

My kids LOVE coconut milk kefir creamsicles I make for them.

1c coconut milk kefir
1tsp gf vanilla
Agave/stevia to taste
And fruit.
Strawberries, blueberries, banana - any combination. Very yummy, and from what I understand the probiotics are still completely active if eaten within 24hrs of freezing :)

Edited to add that I pour them in Popsicle molds to freeze.

We are big ice cream eaters in this house so I've tried many different recipes. Our favorite comes from a restaurant nearby. They never gave me a recipe, just the main ingredients so the following recipe is flexible.

Ice Cream Base
2 cups of coconut milk (not light)
1 cup of soy milk (or nut milk)
Sweetener of your choice (dry is better)
Vanilla bean seeds or extract

Blend the above and adjust sweetness to taste (remember that it will taste less sweet when frozen). For chocolate, add cocoa powder to taste. You may also want to add chocolate chips. The best way to chop them is to freeze them and then chop in a food processor. Or thinly slice and chop a chocolate bar. Freeze according to ice cream maker instructions.

Variations: Strawberry (use almond extract and ripe strawberries for best taste), Mint Chocolate Chip (use peppermint or spearmint extract and add chips after blending).

Sometimes I add lecithin granules (supposed to give it a richer taste) but it's not really necessary. You won't taste the coconut. A higher ratio of coconut milk gives it a richer taste and texture. A lower ratio allows more ice crystals to form so you lose texture. I have found that a 2:1 coconut milk to soy milk works best (so you could just use 1 can of coconut milk and 1/2 can of soy milk).
