GF muffins with yellow and/or green squash in them...
I am trying to hide veggies in Jaden's muffins...

I learned from trial and error that SQUEEZE PARKAY (despite having no trans fats and being casein-free) gives my daughter bad bowel problems.

So whatever recipe you use... (we were making pecan muffins with bananas) avoid the Parkay as a butter substitute. Also avoid bananas if leaky gut is an issue. It took us a while to realize she couldn't tolerate those either... ugh.

i think you could take your regular bannana muffin recipe convertGFCF and use those veggies as consistency would be the same... i say go for it!! my favorite cookie recipe is made of mashed potatoes let me know if interested.we all love them even hubbie!!

I put spinach in the blender and when mixed with fruits etc in a cake or muffin he dosent even notice. My non asd kids like it too.
