Muffin recipe

I figured out a way to add veggies to Jaden's diet without her knowing...
Here is the original recipe that I had to change a bit to make it GFCF...
----
2 c whole wheat flour (I used some garbanzo bean flour, GF all-purpose flour, and sweet rice flour)
1 c grated butternut squash (I added some grated carrots, too)
3/4 c lowfat milk (DariFree)
1 egg or 2 egg-whites
1/4 c canola oil
1/4 c brown sugar, packed
3 Tbsp pure maple syrup (i used honey)
2 tsp baking powder
1/2 tsp grated nutmeg
1/2 tsp salt.

Bake at 350 for 20 minutes.
Jaden thinks she is having dessert 8)

:D I'll have to try those! Koda wont touch a veggie with a 10 ft pole, unless its a french fry or one of the Veggie Tale gang. ;)

I forgot to add:
I put in a tsp of Xanthun gum, too...
