GFCFSF Chicken Marsala

A GFCFSF Italian recipe with diluted red grape juice replacing the traditional Marsala wine.

Ingredients
1/4 cup gluten free flour
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1 red bell pepper, seeded, thinly sliced
4 boneless chicken breasts, pounded to 1/4-inch thickness
1/4 cup olive oil
4 tablespoons Earth Balance Soy Free/Dairy Free Buttery Spread
1 cup white mushrooms, sliced
1/2 cup red grape juice
1/8 cup water
3/4 cup orange juice
1/8 cup balsamic vinegar

Instructions
In a large bowl, add gluten free flour, salt, black pepper, basil, and oregano. Place chicken in bowl and toss until coated. Place oil and buttery spread in a skillet warm over a medium-high heat. When buttery spread is melted, add bell pepper and chicken. Cook until chicken is browned and bell pepper is soft. Add mushrooms. Pour grape juice, water, orange juice, and vinegar in skillet. Stir and cover. Reduce heat to medium. Cook for 10-15 minutes, stirring occasionally.

Yield: 4 servings

Choline: 98 milligrams ...(Acetylcholine is derived from Choline)
Vitamin C: 78 milligrams ...(helps prevent cellular damage)
Selenium: 42 micrograms ...(helps detoxify heavy metals, such as mercury)

I should have noted above that the Earth Balance Soy Free/Dairy Free Buttery Spread in this recipe can sometimes be a little hard to find. Below is a link I've found for it.

You're welcome. This recipe sort of reminds me of the chicken marsala I used to have at the Olive Garden restaurants. It was great.
